Beans With A Bite

Spiced with chilli and fragrant black mustard seeds, these Indian-style green beans make a super tasty side dish which will make your taste buds sing. This make an excellent accompaniment to any Indian main dish but will also spice up any midweek dinner.
If you like your food with more of a bite, simply leave in the chilli seeds, or for extra fire in your soul, be daring and use a bird’s eye chilli.
What you need
250g fine green beans, trimmed
1 tbsp coconut oil for frying
½ tbsp black mustard seeds
1 clove garlic, crushed
1 red chilli, seeds removed and finely sliced
1 tsp coconut sugar
Salt and pepper
What you do
Steam the green beans for approximately two to three minutes until al dente.
Rinse the beans under cold running water to prevent them from cooking further and to help keep their vibrant green colour. Drain well.
Heat the oil in a frying pan. Add the black mustard seeds and garlic and fry for one minute until the garlic is golden in colour.
Add the chilli and continue to fry for a further thirty seconds.
Add the beans, season with salt and a little pepper and give everything a good stir to ensure that the beans are evenly coated. Continue to cook over a gentle heat for a couple of minutes until the beans are just starting to soften.
Stir through the sugar and transfer the beans to a warm serving dish.
Pour the leftover caramelised juices from the pan over the green beans and serve immediately.
