Berry Blast Popsicles

Serves 4

These are super refreshing ice lollies, and are a great way to get children to eat fruit.

You can vary the fruit you use and can add extra maple syrup if you want to give them a sweeter flavour.

Raw coconut water is a little more expensive but is better quality and tastes so much nicer!

What you need

400-500ml raw coconut water

1-3tbsp maple syrup, depending on your preference

Juice and zest 1 lime

Handful berries of your choice

What you do

Pour the coconut water into a bowl and add 1tbsp of the maple syrup.

Whisk the lime juice and zest into the sweetened coconut water. You can add extra here if you like.

Pop a few pieces of fruit into each lolly mould.

Pour equal amounts of liquid into each mould, pop on a lid and insert the lolly stick.

Freeze until solid.

When you want to serve the ice lollies, remove them from the freezer and run the mould under warm water for 10-20 seconds to make it easier to remove the lollies.
