Brav0-cado! Avocado Dip

Serves 6-8

A great little dip to whizz up if you have friends coming round for drinks and one that’s highly nutritious too since avocados are full of good essential fats. This creamy dip is ideal served with root vegetable crisps or crudités and can’t be made in advance.

Kate’s top tips

I like to decorate my avocado dip with a little ‘dukkah’ spice mix available online at www.ottolenghi.co.uk but you could always use a pinch of chilli powder or sweet smoked paprika if you can’t get hold of it. Don’t go overboard with either the tahini or the lemon juice or you will make the dip taste bitter.

1 very ripe avocado, stone removed

½ clove garlic, peeled

1 tsp tahini

Juice ½ lemon

2 tbsp extra virgin olive oil (possibly a little more)

Salt and pepper (don’t be stingy)

 

To serve

A drop more extra virgin olive oil (optional)

Pinch of Dukkah or chilli flakes

What you do

What you do

Place all the ingredients in a food processor and blitz until smooth.

Spoon the dip into your serving dish and sprinkle with your chosen spice.

Serve with crudités or vegetable crisps on the side.
