Chocolate Paradise Bites

Serves 8

Chewy coconut coated in dark chocolate… these make an ideal sweet treat with the added bonus they are high in protein. They are easy to make but you do need to freeze the mixture in between so take that into consideration before you make them. They can be frozen but are best eaten within a couple of weeks.

What you need

225g shredded coconut

2 scoops of unflavoured protein powder (optional)

5 tbsp agave syrup or maple syrup

½ tsp vanilla extract

2 drops concentrated coconut extract

4 tbsp coconut oil, melted

 

For the chocolate coating:

200g 85% organic dark chocolate (you may not need this much but you can always save any leftover chocolate in a bowl in the fridge)

A pinch of salt.

What you do

Line a baking tray with parchment paper.

Mix together the shredded coconut and protein powder in a large bowl.

In a pan over a low heat mix the oil, agave or maple syrup. Pour into the shredded coconut mixture and stir.

Form it into a rough ball shape with your hands but don’t panic if the mixture seems too wet it will be fine once it’s been frozen. Place on a plate and put it in the freezer for 30 minutes. This will make it easier when you form it into individual bars.

Divide the mixture into 8 clumps, shape each one into small bars roughly 7cm x 2½ cm and place on the parchment paper on the baking tray. Place in the freezer for 10 minutes.

Meanwhile, melt the chocolate by placing it in a bowl, broken into pieces, over a saucepan of gently simmering water. (Don’t allow the water to boil).

Once the chocolate is smooth, remove the coconut bars from the freezer and using a fork coat each one in the chocolate.

Place the bars in the fridge to set for at least 30-45mins before eating. They are best kept in the fridge but to be honest they won’t be around too long!
