Super Duper Spinach & Kale Soup
Serves 4-6
This is a wonderful hit of folate and nutrients in one bowl. It’s full of phyto-chemicals which are naturally found in plants and contain antioxidants which help stabilize free radicals. Free radicals can cause cell death so we need to limit these in our diet.
This soup is super easy and cheap to create and is delicious served with my ‘Wow loaf of bread.’ available in my online Clean Slate with Kate plan.
This soup is best eaten within 24 hours and you will need a blender for this recipe.
What you need
1 tbsp, coconut oil melted
1 onion, finely chopped
½ clove garlic, finely chopped (optional)
½ green chilli, deseeded and finely chopped
300g fresh curly kale, tough stem removed
1 litre hot vegetable stock
½ tsp ground nutmeg
400g bag spinach leaves, ready washed
Salt and pepper
What you do
Heat a large deep saucepan and add the coconut oil.
Once the oil has melted, fry the onion, garlic and chilli over a low heat for approximately ten minutes until softened. Add a drop of water if need be to prevent it from burning.
Add the kale, stock, nutmeg and seasoning.
Simmer for approximately 10minutes and check the kale has softened, then add the spinach and simmer for a further five minutes.
Pour the soup into a blender and whizz until smooth.
Pour the soup equally into bowls, add a little more seasoning and serve with a little yoghurt swirld through the soup.
