Broccoli with anchovies and chilli

Serves Four

A great way to jazz up broccoli, especially if you are looking to serve it with an Italian-style dish.

What you need

400g tenderstem broccoli, trimmed and stalks halved lengthways

3 tbsp butter, melted

½ onion, finely chopped

1 red chilli, seeds removed, finely chopped

1 small clove garlic, crushed

2 anchovy fillets in oil, drained and finely chopped

Juice ½ lemon

Salt and pepper

What you do

Steam your broccoli until al dente. Run it under cold water and drain it through a sieve. This will help it to keep its colour.

Heat the butter in a large frying pan, and once melted add the onion, chilli and garlic.

Gently fry for approximately seven minutes until softened.

Add the anchovies, a little black pepper and fry for a further minute or so.

Add the steamed broccoli, fry for a further minute or so and then add the lemon juice.

Check the seasoning. Because anchovies are naturally salty you may not need to add any salt.

Serve immedietly.
