Brazil Nut Energy Balls

These are so easy to make and are ideal if you are looking for a snack mid morning. You can vary the choice of nuts depending on your taste but brazil nuts are high in selenium which is vital for thyroid health and helps with the conversion of thyroid hormones.

These can be kept in the fridge for up to 5 days before they go a little hard. 

 

 

 

 

 

What you need

100g brazil nuts

8 large pitted medijool dates

½ tsp vanilla extract

A pinch of salt

1 tbsp organic cocoa powder

1 tbsp maple syrup

 

What you do

Simply place all the ingredients in a food processor and whizz until combined.

Divide the mixture into eight clumps and roll each one into a ball the same size as a golf ball.

Place the rolled balls onto a plate and put in the fridge to harden up for 30 minutes.
