Cook and Clean with Kate

After Kate Smoothie

Serves 1

This smoothie is so delicious that you will find it hard to believe that it’s actually nutritious and good for you! It’s so easy to whizz up too. Vegans can use raw chocolate as an alternative to the dark chocolate. Using frozen bananas helps to create the ultimate thick, milkshake-like taste – just make sure they have been cut into little bits so your blender has an easier job of blending them.

What you need

2 large, frozen bananas, skins removed

2 tbsp Coconut Collaborative natural yoghurt

120ml coconut milk (possibly a little more)

2 squares Green & Black’s organic dark chocolate, 70% cocoa solids, roughly chopped

1 tbsp fresh mint leaves

¼ tsp peppermint extract

½ tsp vanilla extract

Handful ice

What you do

Simply place all the ingredients in a blender and whizz until smooth.

Add a drop of water if the smoothie is too thick for you liking.

Pour the smoothie into your chosen glass and decorate with a little melted dark chocolate, a few cacao nibs and a sprig of mint on top.

To serve, choose any of the following:

Melted dark chocolate

1 tbsp Cacao nibs

Fresh mint leaves
