Cauliflower Rice
Serves 3-4
This is a great option if you are trying to cut down on carbohydrates in your diet and fancy something similar to rice. Try adding different herbs and spices to jazz it up. Curry powder and cumin work well if you are serving this with a curry-based dish, while fennel seeds and chilli go well with chicken or fish. Make sure your cauliflower is cut into small florets otherwise your food processor will struggle to create the crumb-like texture, and that you season well.
What you need
1 head cauliflower
outer leaves removed and broken into small florets
1 tbsp coconut oil
1 red onion
finely chopped
1 tsp smoked paprika or ½ tsp ground cumin and 1 heaped tbsp curry powder
Large handful coriander or parsley
finely chopped
Salt and pepper
What you do
Wash the cauliflower and place in a food processor to blitz into fine grains similar to rice.
Heat the oil in a frying pan and fry the onion over a medium heat until softened.
Add the cauliflower and spices, and cook for approximately 10 minutes over a low to medium heat before serving.
Season well as too little salt can result in it being a little flavourless.
Add the chopped coriander or parsley.

Cauliflower is high in fibre, along with biotin, a B vitamin that plays an important role in the body’s fat production.
