Not only is this a powerhouse of nutrients and vitamins, it is the prettiest breakfast I have ever created! Pink, my signature colour, means I will always opt for a raspberry flavoured one. A smoothie bowl is super trendy at the moment. Similar to, but thicker than a regular smoothie, a smoothie bowl is more satisfying because you can’t gulp it down in ten seconds. Pimp up your smoothie bowl with different toppings for the ultimate antioxidant hit.
To give your smoothie bowl a thicker consistency, you need to have pre-frozen the bananas. Not the end of the world if you haven’t, but ideally, you don’t want the consistency to be too thin or soup-like. I always like to keep some frozen bananas in the freezer for just such occasions!
What you need
200g frozen berries of your choice
1 large ripe banana, peeled, chopped into pieces and frozen for several hours
2 tbsp Coconut Collaborative natural yoghurt
60-75ml coconut or almond milk
1-2 tsp maple syrup (optional)
What you do
Place the berries, banana, yoghurt and milk into a blender and whizz until smooth.
Taste a spoonful and add maple syrup if you prefer a sweeter taste.
Pour into your bowl and decorate with your favourite topping, remembering to add the heaviest ingredients last if you want to create smoothie bowl art/make your bowl look really pretty.
