Thyme for some fizz – Pink fizz with grapefruit and thyme

Although this is a cocktail, it is really refreshing and can easily be made without the vodka if you’re feeling super self-restrained!! If on the other hand you’re feeling extra cheeky, you can always make it a double shot! Ideally this is best mixed by hand in a cocktail shaker, but you can just use a blender if you don’t have one.
Kate’s top tips:
Make sure you only top up the mixed cocktail with the sparkling water in the glass, rather than adding the sparkling water in the shaker or blender. If you add it too soon, it will fizz up spectacularly and then quickly become flat.
What you need
240ml freshly squeezed pink grapefruit juice
2-4 shots vodka (well it is the party season…)
Juice half lime
2 large handfuls ice
Approximately 150ml sparkling water
What you do
Combine the grapefruit juice, vodka, lime juice and ice cubes in a cocktail shaker and shake to combine.
Pour into your chosen glasses leaving enough room to top up with sparkling water.
Serve with fresh thyme and a grapefruit slice on the side.
