Head’s all over the place & an After Kate Smoothie!

Hi guys,

How’s your week going?

I’d like to say packing the house up, and the organisation of moving to Ibiza is moving forward nicely, but I’ve had such a full-on week that it is currently at the bottom of must do jobs! I go in eight weeks, so really need to get my butt in gear! This is starting to get real and I’m starting to get a few butterflies in my stomach. I’m sure this is all part of the process, but never the less it’s getting real!

I have had all three children’s parents’ evenings this week, a really long photo shoot of a few new recipes for a new project I am working on, and a busy few days planning my cookery demonstration coming up! My heads been all over the place, which I know is particularly bad at the moment as the Waitrose delivery man got a cheeky ‘Love you’ from me as I closed the door on him!!! I’ve done that several times before (not to the same guy thank god), but the worst one was when I went to kiss the Asda delivery man goodbye on the cheek! I cringe now as I type this, but at the time it was hilarious.

It’s an alkalising meat-free menu. I have recently been trying to cut down on meat intake, since my husband became a vegetarian (well actually a pescatarian, as he still eats fish), so I thought i could share some lovely vegetarian dishes with you.

‘What’s on the menu I hear you ask?’ Butternut Squash and Coconut Lentils, Chickpea Flatbreads, Vegetable Curry, a couple of surprise dips, Quinoa Cookies and a Kiwi & Spinach juice. I have designed this to be an alkalizing menu, to detox our systems after too much dairy, red meat and sugar, during the Christmas build up. These recipes are ideal to cleanse your systems and re-balance you.

This week I want to share my After Kate Smoothie with you which is my new favourite snack at the moment. It was quinoa pancakes before this, but the After Eight is the daddy at the moment! I’d love to hear what you think of it.
